• 50gms basil (rocket also works well)
  • 30gms Cashews – pine nuts are better but more expensive, it’s up to you, walnuts also work
  • 30gms Garlic infused Olive oil
  • 30gms grated Parmesan (any hard italian cheese,e.g. gran padano)
  • Salt and pepper to taste

Place all the ingredients in a liquidiser and zizz untill smooth.  Can be stored for weeks in a sealed jar as long as the sauce has a slick of oil over the top.

If you have the pesto already prepared this is a really quick meal (see also, ‘Shortcut:’ below)

FODMAPS: The garlic infused olive oil is a life saver, I so miss garlic. Apparently diy garlic infused olive oil is not FODMAPS safe but I would like to test this, I will return!

Shortcut: Most retail jars of Pesto contain garlic. I have searched high and low and eventually found Morrison’s (in the UK) Basic Pesto, the absolute cheapest but it doest not mention garlic on the list of ingredients (flavouring yes, which sometimes contains FODMAPS problem ingredients albeit in fairly trace amounts). Anyway, we have found this to not cause Delia a problem and consequently we by a half-dozen jars whenever we pass a Morrison’s.
